Watermelon Strawberry Popsicles

Equipment

  • Popsicle mold
  • Blender

Ingredients

  • 6 cups watermelon (780 grams)
  • 1 lime, juiced
  • 6 oz strawberries (170 grams)
  • honey or maple syrup for sweetness (optional)

Instructions

  • Chop watermelon into small cubes. Add to blender.
  • Hull strawberries. You may choose to slice them in half if that makes them easier to fit in the blender. Tip those into the blender as well.
  • Add the juice of 1 lime to your blender.
  • Blend all ingredients together.
  • Taste for sweetness. Add honey or agave if desired (optional).
  • Pour the fruit mixture into the popsicle molds.
  • Freeze for at least 4 hours, or overnight.
  • Once your popsicles have set (yay!), remove from the freezer and let sit on the counter for 2-3 minutes. Then, run warm water over the outside of the molds to make it easier to pop each one, careful not to get any water into the popsicles.
  • Enjoy!

Notes

  • It's perfectly fine to use pre-cut watermelon for this recipe – it actually makes the process go a lot quicker! 
  • During the blending step, you may need to use a tamper to ensure all the fruits get smoothly mixed together. Be sure to only use the tamper that came with your machine. If you blender did not come with a tamper, turn the machine off and wait for the blades to stop moving. Then, carefully use a spoon to stir the fruit mixture, carefully moving larger clumps of fruit closer to the blades so they can get diced and stirred up. Avoid packing the fruit too tightly to the blades. You may want to do this incrementally so you don't damage your machine.
  • I did not add a sweetener to my fruit mixture as it was already very sweet. If it isn't sweet enough to your liking, add honey or agave (or your sweetener of choice), and blend until all ingredients are well-combined.
